Make This Delicious Halloumi Stuffed Pitta, with Tzatziki And A Cheats Chilli Sauce

Serves 4 | Total 10-15 Minutes

With the warm weather inbound, like many of you, we've started to crave meals that are light, fresh and super quick to assemble... so, we decided to ask for a little help from our friends at MOB Kitchen.

Now, seeing as we're unable to travel at this moment in time, we thought we'd bring the Greek islands to you. Celebrating our love, or slight obsession with halloumi, this pitta bread (that's pita, for you guys over the pond), is jam packed with all the summer goodness you could wish for; Kalamata olives, tzatziki, crunchy gem lettuce, and, if you're up to the challenge, a hot hot hot cheats chilli sauce.

Ready in 15 minutes, this is one super simple recipe for you to follow, and we can't wait to see what you think!

The Ingredients:

Stuffed Pitta

  • 2 x 250g Halloumi Blocks

  • 1 Cucumber

  • Fresh Mint (a small bunch)

  • 200g Plain Yoghurt

  • 60g Kalamata Olives (pitted, and halved)

  • 2 Gem Lettuce

  • 4 Pitta Breads

Cheats Chilli Sauce

  • 3 Roasted Red Peppers (roughly chopped)

  • 2 tsp Chilli Flakes

  • 3 tbsp Olive Oil

  • 1 tbsp Tomato Puree

  • 1 tbsp Red Wine Vinegar

  • Salt + Pepper 

The Method:

  1. Make the Cheats Chilli Sauce: blitz the chilli sauce ingredients and season with salt and pepper. Set aside.

  2. Make the Tzatziki: Roughly chop half of the cucumber into small chunks, and then chop half of the mint. Mix the cucumber chunks and chopped mint with the yoghurt, season well and set aside.

  3. Slice the gem lettuce and remaining cucumber into thin strips. Next, slice the halloumi into nice thick strips - you should get around 8 slices per block. To do this, get your halloumi out of the packet and look for where the fold is on the side, then slice through horizontally to follow the fold. Then, cut both your halves in half - vertically - creating 4 pieces. Turn each piece on its side and slice in half again. You are then left with 8 perfect pieces of halloumi that won't break in the pan. Who knew...

  4. Heat a large, non-stick frying pan over a medium-high heat. Add the halloumi and fry for 1-2 minutes on each side, until golden. 

  5. Toast your pittas whole, and then slice in half to create a "pocket".

  6. Stuff your halved pittas with the tzatziki, lettuce, cucumber slices, olives and that crispy, golden halloumi. Scatter with olives and then drizzle with as much hot sauce as you can handle.
